Vegan Black Bean Soup

Ingredients

  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 1 stalk celery, chopped
  • 4 clove garlic, chopped
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 pinch black pepper
  • 4 cup vegetable broth
  • 4 (15 ounce) cans black beans, undrained, divided
  • 1 (15 ounce) can whole kernel corn
  • 1 (14.5 ounce) can crushed tomatoes

Steps

  1. Gather all ingredients.
  2. Heat olive oil in a large pot over medium-high heat. Sauté onion, carrots, celery, and garlic in hot oil for 5 minutes. Season with chili powder, cumin, and black pepper; cook for 1 minute.
  3. Stir in vegetable broth, 2 cans beans, and corn. Bring to a boil.
  4. Meanwhile, process remaining 2 cans beans and tomatoes in a food processor or blender until smooth.
  5. Stir into boiling soup, reduce heat to medium, and simmer for 15 minutes.
