I love to cook when it can be creative, and often modify recipes passed down from my family to fit my vegan lifestyle. We like to take on a challenge, and my husband, daughter, and I try to be as gluten-free, low sugar, low fat, vegan (me always), and least processed as possible. Recipes for me are connecting to family, the holidays, and celebrations, however, I really appreciate the weekly quick meal ideas that can feed a family of different tastes and substitute take out!

Vegan Lentil Soup
It's soup season (every season!) with this hearty substitute for beef or meat based soups. Can be based on garden/farm fresh veggies in season or pantry ingredients if needed. A key for me is the smoked paprika and tumeric added to traditional spices in bean soups. While I use kale, other greens like collard greens can substitute for the those with a kale phobia! The difference between brown and green lentils depends... I usually use brown lentils when making things that already have a lot of flavor as more of a base and green lentils when I want more flavor from the lentils themselves. But really either works for this soup.

Purple Rice aka Forbidden Rice
Purple rice (aka Forbidden rice) is a beautiful and nutty change from your usual white rice! It adds a touch of extra fibre, antioxidants, and of course, a lovely colour.

Fennel Pasta with Greens
Full confession I don't like fennel, but it's super good for you, so if you like and especially can get farm fresh right now, it's worth a look. Fennel provides dietary fiber, vitamin C, and potassium, and it's low calorie like celery. It is also known to promote gut health, heart health, high cholesterol, and fights cell damage with antioxidants. I don't have a real recipe for this just - I just cut up bulb and roast with balsamic, a bit of olive oil, a little homemade garlic powder, and fresh lemon juice for about 10 minutes to 15 minutes (depending if you prefer crunchy). We had our garden tomatoes and peppers to add, and we are swimming in arugula so on it goes - all over pasta with a little lemon butter sauce. Fronds (the feathery, dill-like green leaves at the top of the stalks of fennel) are great garnish.

Vegan Country French Dressing
I love dressing like Ken's Country French which is mostly vegan anyway except for honey. This is my favorite homemade version, but there are other varieties that use coconut sugar and additional spices. Noting to use vegan ketchup or homemade ketchup as some white sugar in ketchup (which storebought is loaded with) can be processed with bone char.

Chive Blossom Vinegar
Don't throw away your chive blossoms. We use chives in many recipes, and they are a constant in our garden. This is my first year making chive vinegar, but I'm very excited for the results as it's suppose to turn a bright pink beautiful concoction in 2 weeks time.

Rachel Ray's Quick Pickles (Tweaked)
Quick pickles are an amazing addition to so many dishes or as a quick side for a sandwich or burger. This is Rachel Ray's recipe with a few tweaks and also an image of raw veggies, quick pickles, vegan feta on vegan Just Egg toast with balsamic glaze. A new favorite breakfast!

Vegan "Clam" Chowder
Modified this to make vegan for a chowder competition, but we ended up not being able to attend, and I was also a little nervous not because it didn't taste amazing because we all really liked it, but because it was heavy on mushrooms which I know a lot of people don't like (or at least people in my family and friend group). The artichokes were so key, and it had that chowder consistency and savory and ocean type taste. Old Bay is vegan. Seaweed is vegan. Also this recipe is Gluten Free. If you don't like mushrooms you might be able to double up on the potatoes and artichokes.
