"Romantic" Roasted Vegetable Hummus
Perfect recipe for late summer and early fall - my favorite time of year! Love the ROMANTIC color, smell, and taste of this fresh homemade hummus. Works for a first home dinner date or 200th date haha, movie night, game night, or a watch party with friends. I started making a lot of hummus during the height of the pandemic, so I still tend to serve in little individual cups as pictured. Vegetables used in this case are fresh garden and farm available for us this late summer, but really a variety can be used. Original recipe calls for eggplant cubed, but I have tended toward the more popular veggies with the majority. Plenty of room to experiment with the foundation of this tasty dish.

Ingredients
- 1 can (15 oz) chickpeas (garbanzo beans), rinsed and drained (except keep 1/2 cup reserved chickpea liquid)
- 1/2 cup (if jarred) or1 medium roasted red bell pepper roughly chopped
- 1/3 cup fresh tomato chopped
- 1/4 cup tahini
- 2 tbsp extra-virgin olive oil
- 1 small onion diced
- 1/2 tsp cumin
- 1 tsp smoked paprika
- 1 Cup - Pretty much any roasted vegetable like carrots or eggplant cubed you want
- Salt and Pepper to taste
- 1 tsp rosemary (if care for - I do not although I do grow it!)
- Juice from 1/2 lemon
- 4-ish small pickled sweet peppers - seeds removed and chopped
Steps
- Heat Oven to 400 degrees. Spread vegetables you are roasting on a baking sheet and coat with olive oil. Sprinkle with salt and pepper (rosemary if care for)
- Roast vegetables for about 20-30 minutes depending on variety between carrots, eggplant, etc. Peppers probably need a little less time.
- Remove vegetables and let cool completely.
- Add 1/2 cup reserved chickpea water to blender or food processor
- Add chickpeas, roasted vegetables, lemon juice, tahini, salt, cumin, smoked paprika, and pepper and blend on medium until has a smooth texture.
- Remove and put in large bowl and mix in fresh or pickled chopped vegetables and herbs to your liking including pickled sweet peppers, tomato, and onion.
- For serving purposes consider individual servings in little bowl with personal crackers or chip preferences.
